Makes roughly 4 servings

You Will Want

4 cups cherry tomatoes

1/2 cup halved and pitted assorted olives

3 tablespoons extra-virgin olive oil

1/4 teaspoon pink pepper flakes

1/4 teaspoon sea salt

1/2 cup ricotta cheese

Zest of half a lemon

15 to twenty mint leaves, chopped

Baguette, warmed and sliced for serving

Instructions

    Warmth oven to 425 levels F. Minimize tomatoes in half or quarters, so all of the tomatoes are related in measurement. Add to a 2-quart baking dish together with the olives, olive oil, pink pepper flakes, and salt.
